Hi Everyone,

That delicate mixture of carefully baked biscuit, a touch of fruit, topped with crispy sweet meringue… what more could any taste buds long for?

This recipe really reminds me of New Zealand, (hence the title “Kiwi Louise Slice”), especially as you will find a Louise slice available in most cafes there.

The Kiwi Louise Slice

The Kiwi Louise Slice

Line 25* 25 cm baking tin with baking paper. Preheat oven to 180°c

Ingredients:
  • 150g butter,
  • 1/2 cup sugar,
  • 2 egg yolks,
  • 1 teaspoon vanilla sugar,
  • 2 cups flour,
  • 1 teaspoon baking powder,
  • 1/2 cup red jam ( any flavour).

Note: 1 cup is 120g

Meringue topping:
  • 4 egg whites,
  • 1 cup sugar,
  • 2 cups desiccated coconut

 

Recipe:

Base:

Cream butter and sugar, add vanilla sugar until mixture is light and fluffy.

Beat in the egg yolks one at a time.

Add flour and baking powder and mix a little only until a crumbly mixture forms.

Press this evenly into prepared baking tin and bake for 15 minutes.

 

Topping:

Warm jam in microwave long enough for it to become liquid.

Once base ready take it out of oven and leave a few minutes to cool.

Spread liquid jam mixture over biscuit base.

Beat 4 egg whites until very stiff and then add sugar, a little at a time.

Gently fold through the desiccated coconut.

Spread evenly over biscuit and jamb mixture.

Return to oven for  a further 20 minutes or until crispy on top.

Once finished take out of oven, cool for at least 15 minutes and then slice into even sized portions.

    Mike, my husband LOVES LouLou cake, – which is what his family always called Louise cake. I’ve waved one of your photos in front of him, which actually diverted his attention from the guitar tutorial he was watching, and you can now guess what’s on the agenda today!
