If you’re anything like me you’re always running short on time. So what better thing to have other than a super easy and quick to bake cake recipe. This ginger cake is so tasty too – your family and friends will be begging for more – haha!
Recipe based off the original from the Australian Woman’s Weekly.

Ginger cake – only 15 minutes preparation time!
Line a 23cm square cake tin with baking paper and preheat oven to 160°C fan bake
Ingredients:
- 1 & 1/2 cup sugar
- 3 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tbsp ground ginger
- 2 tsp ground cinnamon
- 1 tsp ground nutmeg
- 250 g softened butter
- 2 eggs
- 1 cup milk
- 1/2 cup golden syrup
Recipe:
Sift all dry ingredients together
Add remaining ingredients and then beat mixture on low speed until the mixture is smooth and changed to a paler colour.
Pour mixture into the prepared tin and bake for approximately 1 hour.
Lemon icing
- 60g softened butter
- 2 tsp grated lemon rind
- 1 tbsp lemon juice
- 1 cup icing sugar
Mix ingredients together, adding more sugar or juice to suit your desired thickness.
Be sure to wait until cake has cooled down before icing.
