As temperatures decrease it’s lovely to spoil ourselves with a little yummy comfort food… This super easy to make cheesecake slice is an absolute treat for a dinner party dessert. With an added advantage of being able to make the whole thing in advance.
Easy entertaining at it’s best!

Salty Peanut Butter Cheesecake Slice
Line a 15cm x 30 cm cake tin with baking paper.
The Base
Ingredients:
- 250g ginger biscuits
- 120g melted butter
Preparation:
Crush the biscuits in a processor, then add butter and press mixture evenly into the bottom of the prepared tin.
Place in fridge for at least 15 minutes to firm up.
The Cheesecake Mixture
Ingredients:
- 400g cream cheese
- 100g icing sugar
- 30g butter, melted
- 1 tsp vanilla sugar
- 200g crunchy peanut butter
- 1 tbsp lemon juice
- 250ml cream
Preparation:
Blend together all the ingredients except fo the cream in a food processor until smooth and creamy.
In a separate bowl whip up the cream until soft peaks form.
Fold cream into mixture on a spoon by spoon basis to lighten the mixture until well combined. Then spread cheesecake mixture evenly over the prepared base making sure the top is nice and smooth.
Place into the fridge while you prepare the topping.
The Topping
Ingredients:
- 100g dark chocolate
- 85ml cream
- 75g roasted salty peanuts, chopped
Preparation:
Melt the chocolate and cream together – either over a pan of simmering water or carefully in the microwave. Note it is important to warm together and not add the cream later as otherwise the chocolate will curdle.
Once the mixture is melted and nice and glossy, spread evenly over the prepared cheesecake mixture.
Sprinkle chopped peanuts over the top.
Leave for at least 2 – 3 hours in fridge to firm up before serving.
