Christmas Shortbread Slice

Hi Everyone,

Hard to believe but in just one weeks time it will already be the first Advent for 2022. Definitely time to start baking those Christmas cookies. If you’re anything like me though this is also a super busy time of year and the thought of spending hours cutting pretty cookies can become somewhat daunting. Especially with a huge todo list looming on the side.

Given all that this Christmas shortbread slice recipe is really the answer! Only a few stars to cut out and many shortbread slices as a result. Not forgetting it is absolutely delicious – perfect with a nice glass of bubbles or coffee.

Christmas Shortbread Slice

Christmas Shortbread Slice

Use a 20 – 25 cm square baking dish lined with baking paper.

Ingredients:
  • 250g unsalted butter
  • 160g icing sugar
  • 225g plain flour
  • 90g white rice flour (helps to give that classic crisp & crumbly texture)
  • 1tsp vanilla extract
  • 1 cup cherry jam ( you can also use raspberry jam if you prefer)

 

Recipe:
  • Place butter, sugar, both flours and vanilla in a bowl and then beat with electric mixer until the dough just starts to come together.
  • Divide the dough in half, cover one half with plastic wrap and set aside in the fridge.
  • Roll the other half out between two sheets of non stick baking paper to 4 mm thick.
  • Preheat oven to 160° C
  • Take the rolled dough and cut out various sized star shapes – placing them carefully on a board that later will fit into your fridge. Once finished, place in fridge for at least 15 minutes.
  • Combine the dough scraps with the cooled first half of the dough and using the back of a spoon press it into the base of the prepared baking dish.
  • Prick the base all over with a fork and then bake for 20 minutes or until golden. Allow to cool for 15 minutes.
  • Spread the jam over the shortbread and then top with the cut out stars, overlapping them slightly. Bake for a further 20 minutes until the stars are golden.
  • Allow to cool completely in the tin.
  • once cool remove from tin and dust with extra icing sugar.
  • Cut into slices to serve.
