Melting moments remind me of my childhood. You’ll find them in almost every cafe in New Zealand. Mostly with yellow icing in the middle but I decided to funk them up a bit today – smile!
One bite and the rest simply melts in your mouth – hence the name “Melting Moment”.

Marvellous Melting Moments
Preheat oven to 180°c and line a tray with baking paper.
Recipe makes 18 melting moments.
Inredients:
- 250g butter,
- 1/3 cup icing sugar (sifted),
- 1tsp vanilla essence,
- 2 cups flour,
- 1/3 cup cornflour
Recipe
Cream butter, sugar and vanilla sugar until light and fluffy
Sift flour and cornflour then add to butter mixture.
Roll teaspoons of mixture into balls
Place on paper lined oven tray and flatten slightly with the back of fork
Bake for 15 – 20 minutes
BUTTER FILLING:
Ingredients:
- 60g butter,
- 2/3 cup icing sugar,
- grated rind of one lime
- a little pink food colouring
Recipe:
Simply beat all ingredients together until well combined.
To Assemble:
Place butter filling on the underside of one cookie, then add a dollop of the butter filling on top. Dust with icing sugar as a finishing touch.
Enjoy with a nice cup of English Breakfast tea and think of New Zealand!
