This recipe has to be credited to my Mum…by now most of you will have realised that she is currently visiting me in Zurich – famous back in Auckland for her white chocolate cookies I finally managed to convince her to make some for me…
Ingredients:
125g butter
3/4 cup brown sugar
1 egg
1 and 3/4 cups flour
1tsp baking powder
3/4 cup cranberries
250g chopped up white chocolate (or chocolate bites if in NZ)
Recipe:
Preheat oven to 180°C and line 2 trays with baking paper
Beat butter and sugar until pale and creamy
Add egg and beat briefly
Stir in flour, baking powder, white chocolate and cranberries.
Roll teaspoons of the mixture and place on tray – then flatten slightly with a fork.
Bake for 15 minutes or until slightly golden.
Special message from Mum to her friends in NZ – she promises to bake you all some more cookies as soon as she is back 😉
For the rest of you – have fun trying out the recipe and don’t be like me – can hardly stop myself from eating whole batch at once – will have to go running for a whole week non stop to make up for the calories 😉
