We have been having such a cold snowy day in Zurich today that desperation has consumed my imagination leading me to conjure the idea of sitting outside in the snow wrapped in a thick blanket drinking freshly brewed coffee and eating chocolate brownies. Anyone want to join me?
I started off trying to follow a recipe and then realised I didn’t have half the ingredients so ended up making up my own and have decided these are some of the best brownies I have ever tasted and am going to share my recipe with you:
Ingredients:
185g dark chilli chocolate, 185g butter, 3 eggs, 1 1/4 cups castor sugar, 2/3 cups plain flour, 1/2 cup cocoa powder, 200g chopped white chocolate, 200g chopped milk chocolate
Recipe:
Preheat oven to 180°C, place butter and dark chilli chic in a saucepan and melt over low heat. Meanwhile place eggs and sugar in a bowl and beat until pale and creamy. Fold through the melted butter and choc mixture. Sift in the flour and cocoa – mix to combine. Add the white and milk chocolate and place in a 22cm square cake tin (don’t forget to line the tin with non-stick baking paper first). Bake for 35mins. Allow to cool on metal rack before cutting into squares. Can be served as desert – try cutting in larger slices with a heaped spoon of creme fraiche and topped with a salted caramel sauce – yum! Have fun and if you eat too many just go for an extra long run the next day to make up 🙂
