I get so excited this time of year when all the lovely stone fruits come into season. Can’t wait to try out every recipe possible and this crumble recipe certainly hit a soft spot of mine.
Based on a recipe sent to me from the Interalpen Hotel in Austria – read previous post about our stay there.
The original recipe used plums which I exchanged for peaches but I also once made this with blueberries – so use whatever fruit you have or a combination of your favourites – anything goes!

Summer Peach Crumble Cake
Preheat oven to 180°C, ingredients for a 24 cm round pie dish
Base:
- 50 g icing sugar
- 100 g butter
- 200 g flour
- 1 egg
- 1 pinch of salt
- grated lemon rind/ vanilla sugar
Mix sugar, flour and butter well with beater.
Add egg, salt and lemon rind/ vanilla sugar (add these in quantities you like).
Create a dough and then line the base of the pie dish evenly with the mixture.
Topping:
- 350 g sliced peaches
- 100 g ground almonds
- 100 g sugar
Place ground almonds evenly over the base.
Then place the fruit on top and finally sprinkle with sugar.

- 50 g sugar
- 125 g butter
- 150 g flour
- 1 pinch salt
Rub together the ingredients and then sprinkle evenly over the fruit mixture.
Place in preheated oven at 180°c and bake for 25 – 30 minutes.
Tastes fabulous with a touch of whipped cream – yum!
