There’s something about a good cheesecake that is simply irresistible. They make brilliant desserts, especially if light and fluffy like this lime cheesecake.
I love the fact that it is no bake and easy – in fact best – to make a day ahead of time. In this recipe I divided the mixture into 4 individual sized portions but you can also use a 20 cm spring form and serve slices instead of a whole or half a tartlet. In this case the filling ends up being somewhat higher in proportion to the base.

No-Bake Lime Cheesecake
Recipe perfect for a 20cm spring form
Ingredients:
- 200g digestive biscuits
- 1 teaspoon ground ginger (optional)
- 100g unsalted butter, melted
- 500g cream cheese
- 100g icing sugar
- 2 limes, zested and juice plus one for serving
- 250g full cream
Recipe – Base:
Put the digestive biscuits into a food processor and whizz to form. fine crumbs. Then pour in the melted butter and mix well until fully combined.
Spread biscuit & butter mixture into your spring form. Press down with the back of a spoon to even the base.
Transfer to fridge and chill for 30 minutes.
Recipe – Topping:
Whisk together the cream cheese, icing sugar, lime zest & juice until smooth. Then slowly pour in the cream, whisking continuously as you do so.
Keep whisking until the mixture is very thick. Then pour on the cheesecake base making sure the top is level.
Be sure to chill for at least 3 hours before serving.
Serve with grated lime zest sprinkled on top and a thin slice of lime as shown above.
