Sunday morning – making me think of food again – feeling a little homesick for NZ makes me think of my childhood favourite cookies – Melting Moments!
This recipe is largely based from my trusty Edmonds Cookbook (unbelievable – first published in 1908) with a little Funky modification 😉
Ingredients:
175g butter, 1/4 cup icing sugar, 1tsp vanilla sugar, 1 & 1/2 cups flour, 1/4 cup custard powder
Instructions:
Preheat oven to 180°
Cream butter, sugar and vanilla sugar until light and fluffy
Sift flour and custard powder then add to butter mixture
Roll teaspoons of mixture into balls
Place on paper lined oven tray and flatten slightly with the back of fork
Bake for 15 – 20 minutes
BUTTER FILLING:
Ingredients:
75g butter, 3/4 cup icing sugar, 3tablespoons custard powder
Instructions:
Simply beat all ingredients together until well combined.
To Assemble:
Place butter filling on the underside of one cookie, then add a dollop of cherry jam, place another cookie on top and voila!
Enjoy with a nice cup of English Breakfast tea and think of New Zealand!
