Hi Everyone,

There’s something ever so pretty about a lattice cake. All the same I’m going to start by confessing that this is the very first lattice cake I have ever made so I certainly don’t have it looking perfect yet. Next time I will put dough into the fridge for the topping whist I am preparing the base – thinking this way I will be able to make more perfect looking lattice strips for on top.

Still food isn’t only about looking good and this recipe is so delicious – it is truly the yummiest lattice cake I have ever eaten. My recipe is based off a recipe from my stay at the Amolaris Bijoux Garden Chalets.

Lattice Cake for Beginners

Lattice Cake for Beginners
As you see the cake was so delicious, I had to work fast to be able to photograph before it was all eaten!

Line a square 23cm tray with baking paper and preheat oven to 180°C

Ingredients:
  • 150g butter,
  • 150g sugar,
  • 1 pinch of salt,
  • 1 grated lemn rind,
  • 2 eggs,
  • 1 packet vanilla sugar,
  • 1 generous pinch of ground cloves,
  • 1/2 tsp cinnamon,
  • 1 – 2 tablespoons Grand Marnier,
  • 175g ground almonds (I like using those without the skin),
  • 150g flour,
  • 1/2 packet baking powder (approx 8 grams),
  • 50 grams chopped white chocolate(of course you can use dark if you prefer),
  • Approximately 1 cup of your preferred jam.

 

Lattice Cake for Beginners

Recipe:

Cream butter, sugar, lemon rind, salt and vanilla sugar until soft and pale in colour.

Next add the eggs and beat well.

Add cloves, cinnamon, flour, almonds, baking powder, chocolate and grand mariner, combine together until soft but still crumbly.

Pour 2/3 of the mixture into the baking tray and flatten to make a nice even base.

In the main time roll the remaining dough into a rectangle – about 1/2 cm thick – and place in the fridge to keep cool.

Spread jam evenly on top of the base.

Now take remaining dough out of fridge and slice into thin strips to place over the top of the cake in a lattice pattern.

Bake on the lowest rack of a preheated fan oven for approximately 25 minutes.

Once cooled I like to sprinkle over a touch of icing sugar for effect.
