Finally …after going through 1’000 cookbooks I decided to make up my very own Chocolate Caramel Slice…much to my family’s horror and yet they seem to be munching it quite happily now – hehe!

FunkyForty Original Chocolate Caramel Slice
Preheat oven to 180°C and line a 18 x 24 cm tin with baking paper.
Base:
- 50g fine brown sugar
- 150g butter
- 150g flour
- 1 slightly heaped teaspoon baking powder
- 2 tblsp crunchy berry cereal (I use familia c.m. plus Wildberry Muesli)
Mix all ingredients together until well combined
Press evenly over the base of the tin
Bake for 15 – 20 minutes until golden and leave to cool.
Caramel Topping:
- 397g sweetened condensed milk
- 125g butter
- 75g fine brown sugar
- 2 tblsp golden syrup
Place all ingredients in saucepan over low heat until melted
Stir occasionally
Once melted bring to the boil, stirring continuously for 10 minutes or until caramel thickens
Pour over prepared base and then cool completely.
Chocolate Topping:
- 200g chocolate
- 2 tblsp crunchy berry cereal
Melt chocolate, spread over caramel topping and then sprinkle over crunchy berry cereal.
Makes the perfect afternoon tea snack!
