There’s something about a good cheesecake. One that simply melts in your mouth and oozes delicious sweet flavours.
This super easy lemon cheesecake doesn’t require any baking, is super easy to make and sure to delight guests at any dinner party. Alternatively serve in the afternoon with your favourite tea. The perfect way to spend a cold Autumn afternoon – smile.
Todays’ recipe is inspired from Donna Hay – I have just amended the proportions and type of biscuits a little.

Easiest Ever Lemon Cheesecake Slice
Line a 10cm*30Cm cake tin with baking paper
Ingredients Base:
- 120g store bought biscuits – you can use whatever plain biscuits you wish but my favourite are Biscoff from Lotus.
- 35g shredded coconut
- 60g butter, melted
Recipe:
Place the biscuits, butter and coconut in a food processor and process until fine.
Poor the mixture into your prepared tin.
Using the back of a spoon, firmly press the mixture into the base of the tin.
Refrigerate whilst you make the filling.
Ingredients Filling:
- 250g cream cheese
- 100g white chocolate, melted
- 240g store bought lemon curd
Recipe:
Place the cream cheese, chocolate and 160g of the lemon curd in the food processor and process until smooth.
Spread onto the cooled biscuit base.
Gently spoon the remaining 80g lemon curd over the slice to create a swirled effect.
Refrigerate for 2 hours until set.
Remove from the tin, place on a serving plate and then serve in slices.
Enjoy!
