Fifteen days left until Christmas…this is the time I always try out new recipes to decide what to serve on the 24th December… My husband cringes as often when trying something out for the first time it…well, it sort of doesn’t turn out (smile). In any case 10 points were given for this cake as it really did turn out pretty good especially considering it was a “first time” bake.
Cream Cheese and Cranberry Star Cake
Line oven tray with a sheet of baking paper. Then place star shaped cake form (27cm in diameter and 7cm high) on the tray.
Preheat oven to 175° C
Base:
Ingredients
- 4 eggs
- 2 Tbsp cold water
- 180g sugar
- 80g flour
- 80g cornflour
- 1 tsp baking powder
Recipe:
- Separate the eggs and beat the egg whites and cold water together.
- Once stiff gradually mix 100g sugar bit by bit – note total beating time should be at least 10 minutes for the best result.
- Beat the remaining sugar and egg yolks until creamy and thick (thick is very important).
- Carefully combine egg white and egg yolk mixtures.
- Combine and sieve flour, cornflour and baking powders and then carefully fold into the egg mixture.
- Pour mixture carefully into star shaped cake form
- Bake for 30 – 35 minutes
Wait for cake to finish baking before doing the other steps.
Once the cake has cooled down carefully remove it from the form and turn it upside down.
Place the bottom half back in the star shape cake form.
Cranberries
Ingredients:
- 400g jar of cranberries
- 4 sheets of gelatine
Recipe:
- Soak gelatine sheets in cold water to soften
- Put cranberries in pot and warm slowly
- Add gelatine sheets and stir until fully combined and a thick paste is created.
- Spread mixture carefully over bottom layer of cake
Cream Cheese filling:
Ingredients:
- 500g low fat quark
- 400g beating cream
- 1 lemon
- 8 sheets gelatine
- 200g sugar
Recipe:
- Soak gelatine sheets in cold water to soften
- Grate rind of lemon and squeeze out the juice
- Beat together the quark, sugar, lemon juice and rind
- In a separate bowl beat the cream and then carefully combine with the quark mixture
- Slightly warm gelatine sheets and then initially add a small amount of the cream mixture before adding all to the quark/cream mixture
Once everything has been combined spread cream cheese mixture over the cranberries. Then place second layer of base on top.
Now the fun begins – decorate to your hearts content…
