Officially Advent time also means it’s officially time to start baking those Christmas cookies. If you’re anything like me you will have some years with enough time to splurge on a vast array of cookies and then others where there is no time left at all for baking.
This Cranberry Sable cookie recipe is the easiest Christmas Cookie recipe ever. The one I always find time to make.
Secret tip: Keep rolls of uncooked pastry in the fridge and pop into the oven just 15 minutes before your guests or family are coming to have tea with you. The smell is Devine and there is nothing quite as fabulous as munching a wonderful slightly warm cookie with your favourite tea or coffee.

Cranberry Sable Christmas Cookies
My favourite recipe for quick cookies that are sure to impress and simply melt in your mouth:
Ingredients:
- 175g Unsalted butter,
- 75g Fine brown sugar,
- 1 tsp Vanilla sugar,
- 1 pinch Salt.
- 1 tblsp Milk,
- 250g Flour,
- 3/4 cup Cranberries
Recipe:
Mix all ingredients together, divide the mixture in two to form two longish rolls approximately 3 cm in diameter, cover the rolls with cling foil and place in fridge for at least 1hour (but you can also leave in fridge for up to 3 days).
When ready cut rolls into 5 mm slices, place on baking paper lined tray and bake in pre-heated oven at 200° for approximately 10 – 12 min – personally I always watch and take the cookies out once they start getting a little golden on the bottom.
Cool on racks, sprinkle with icing sugar and enjoy!
