This is where I start with a confession to having a total berry addiction in summer.
When I first moved to Switzerland work colleagues of mine would eat nothing other than a whole pineapple a day. When it is super hot I sometimes feel as though I could survive the whole day on berries… although somewhere carbs, cereal and other stuff also always creeps in – haha.
In any case this super simple blackberry mousse is truly my favourite easy summer dessert recipe – recently found in my local COOP supermarket (and nope this is not an ad).

Blackberry Mousse Made Easy
Step 1:
Ingredients
- 250 g blackberries
- 50 g sugar
- 2 tbsp water
- 2 gelatine leaves
Method
- Place blackberries, sugar and water in a saucepan. Bring to a boil.
- Cover, reduce heat, and simmer for 4 minutes.
- Meanwhile, soak the gelatine leaves in cold water.
- After 4 minutes, puree the berries.
- Immediately add the softened gelatine and stir until dissolved.
- Pass the mixture through a fine sieve.
- Refrigerate for 25 minutes until lightly thickened.
Step 2: (once the mixture has been cooled)
Ingredients
- 150 g sour cream
- 2 dl full cream, whipped
Method
- Beat in the sour cream into the mixture.
- Carefully fold through the whipped cream.
- Pour the mixture evenly into 4 serving glasses.
- Place in fridge for approximately 4 hours to cool.

Step 3: Assemby
Ingredients
- 50 g sour cream
- approx 100g blackberries
- chocolate shavings
Method
- Place a spoon of sour cream onto each serving.
- Then add the blackberries.
- Finish by sprinkling chocolate shavings on top.
