Afternoon tea with Madeira!

The Madeira Loaf

One of my favourite afternoon tea treats is the simple madeira cake…with spring coming up I thought I would try something different and have added sugar coated roses as decoration – most simple afternoon tea ever but sure to impress!

Ingredients:

175g butter, 2/3 cups fine sugar, finely grated zest of 1 lemon, 3 eggs, 1 & 1/2 cups flour, 2 tsp baking powder

Recipe:

Preheat oven to 180° and line 11cm x 23cm loaf tin with baking paper.

Put butter, sugar and lemon in a bowl and beat until smooth. Add eggs one by one beating continuously. Sift over flour and baking powder – beat very brief into mixture just making sure all is combined well.

Place mixture into lined baking tin and bake for approximately 40 mins – to check if ready insert skewer or knife in middle and see it comes out clean.

Icing:

Mix icing sugar and lemon juice together to form a thick paste – add juice to sugar a spoonful at a time to ensure icing does not become too liquid. Use a flat knife or long spatula to spread onto cooled cake.

Sugared roses:

Use spray-free roses. Brush with beaten egg white and then sprinkle spoons of sugar over. Leave in a dry/ warm place – allow at least 24 hours to dry properly. I like to start the process off in the oven for 30 mins at 40° but be careful if you do this – ensure your oven does not get too hot.

If you want to be decadent you can serve the cake with whipped cream – YUM!

  1. Nice looking cake. Do you get edible flowers in the supermarket in Switzerland. They are popular in nz for decorating cakes and desserts. You can grow them from seeds at home to have them fresh to use when required if you can’t buy them.
