Perfectly packaged Aniseed Cookies

Nothing like giving away perfectly packaged goodies…

My Hubbys’ favourite cookies are aniseed biscuits and so each year as a special treat around Christmas I will bake him a batch – this batch is solely for him and no one else gets any which makes everyone else think I am terribly odd – smile.

Recipe:

4 eggs, 450g icing sugar, 1 pinch salt, 1.5 tbsp aniseed, 1tbsp kirsch, 550g flour

Mix all the ingredients together (except for the flour) and beat with a mixer until the mixture turns a much lighter colour, then add the flour. Roll out the pastry about o.8 – 1 cm thick and cut out your favourite shapes. Of course if you have one of the traditional biscuit stamps it is always fun to use those ( you will find these in any central European Christmas market but don’t be surprised they are not terribly cheap).

Place the biscuits on a slightly greased tray and then leave them to dry in a sheltered spot for 36 – 48 hours. Then bake them at 140°C for 25 – 30 mins.

Have fun!
