New Years Eve Treat – White Chocolate Vanilla Cake!

Can’t believe it’s New Years Eve already! What are you up to tonight?

It’s always tradition that I make dessert and it’s always something new that I’ve never baked before – this year I’m trying out a lovely recipe from Annabel Langbein – one of my favourite NZ cooking authors.

There you go – that should be encouragement for you – if I can do this so can you!

New Years Eve Treat – White Chocolate Vanilla Cake

Serves 32 (a couple of pics right at end of how to cut the cake and serve)

Preheat oven to fan bake 150°C. Line the base of 2 *20 cm spring form cake tins with baking paper.

Ingredients:
  • 2 * 250g butter
  • 2 * 150g white chocolate
  • 2 * 2 cups castor sugar
  • 2 * 1 cup milk
  • 2 * 2 cups flour
  • 2 * 1 & 1/2 tsp vanilla extract
  • 2 * 1 tsp baking powder
  • 2 * 2 eggs lightly beaten
Recipe:

I’ve mentioned 2* everything above as I preferred to mix each cake separately to ensure they are equal.

  1. Place butter, suger, chocolate, and milk in a large pot. Stir over a low heat until melted.
  2. Remove from heat and allow to cool a little.
  3. Fold in sifted flour, baking powder and eggs.
  4. Transfer to prepared cake tin.
  5. Bake for 1 & 3/4 hours – cover cakes loosely with tinfoil at half time to ensure the tops don’t brown too much.

Butter cream ingredients:
  • 300g butter
  • 4 & 1/2 cups icing sugar
  • 4 tbsp milk
Butter cream recipe:
  • Simply beat all ingredients together until light and fluffy.
  • You may need to add more sugar to reach the right consistency.

Preparing cake:
  • Slice cakes in half horizontally.
  • Place one cake base on a cake board or plate. Spread 1/4 of the butter cream mixture.
  • Place one top on top of the cream and spread another 1/4 of the butter cream mixture on top.
  • Repeat with the second top.
  • Turn the second bottom upside down and place on top.
  • Using the remaining butter cream lightly cream the outer sides and top of the cake.
  • Decorate the top as you desire – edible flowers are always impressive. You may even like to add some sugar coated rose petals for added effect.
  • Note you can buy edible flowers in selected food shops or you could take roses from your garden – provided you know they have never been sprayed. Do not use flowers bought from a flower shop for baking.

  1. It’s my 5:2 eating plan day today. BUT your cake looks so S imply delicious think my 500 total calorie count for day just doubled. Thanks for recipe intend baking it later this week.
